How to Prebake a Tart Crust

Appears in
Cooking

By James Peterson

Published 2007

  • About
  1. Line the crust with a sheet of parchment paper—leave extra paper around the sides to make it easier to remove—and pour in dried beans or rice saved for this purpose. Spread the beans so they cover the entire surface of the crust.

  2. Bake in a hot oven until the edge is no longer translucent. Remove the paper and beans.

  3. Continue baking until the bottom of the tart is pale brown.
