  1. Use a small ice cream scoop, measuring spoon, or other consistent measure for the dough to keep the cookies uniform in size.
  2. When you are rolling cookie into balls it’s better to oil or butter your hands than to flour them. The flour on your hands could bake on the cookies and make an unattractive crust.
  3. When a recipe says to roll dough into narrow, pencil-like strands, use very little flour on the work surface or the dough might just slide around rather than rolling into a cylinder.
  4. Use a ruler if a recipe calls for cutting dough to specific dimensions. You’ll be a lot happier with the resulting neat and uniform cookies.
