This very finely ground sugar with some cornstarch added so it doesn’t clump is used to sprinkle on cookies or to make glazes. Confectioners’ sugar may also be an ingredient in some very delicate doughs used for making tender, fragile cookies. Before sprinkling confectioners’ sugar on cookies, make sure they have cooled thoroughly or the sugar will melt. Also, be sure to sprinkle the sugar lightly—too heavy a coating is cloyingly sweet and messy to boot.
