Best quality candied fruit is usually only found in import and specialty stores. The type available in the supermarket at holiday time for typical fruitcake baking is usually bitter and undercandied, resulting in an inexpensive product which lacks flavor and sweetness. If you donβt plan ahead and order fine quality candied fruit from one of the mail-order sources at the end of the book, wait until you can, rather than use the supermarket type.
