There are two keys to shipping cookies successfully: Wrap them loosely and individually in plastic wrap and use small containers. If you want to ship a lot of cookies, get a lot of small containers and nestle them in Styrofoam (or real) popcorn in a large box. This has recently become easier and less expensive with the availability of the multiple-use disposable plastic containers.

What to Do If You Have Only Two Cookie Sheets

Many of the recipes here call for making several dozen cookies. If you don’t have a lot of cookie sheets, here’s a simple solution: Cut parchment or foil sheets the same size as your pans. Line the pans and bake the first batch of cookies. While they are baking, form more cookies on the precut sheets. When the first cookies are baked, slide the papers off the pans, cool the pans until they are no longer hot, then slide the papers with more cookies onto the pans to bake. Also remember that cookie sheets and jelly roll pans are relatively inexpensive and that with two cookie sheets and two each jelly roll pans of two different sizes you can tackle almost any recipe here and not have to wait for pans to cool between baking batches of cookies.
