Cornmeal and cornstarch (also known as cornflour) are made from different parts of the corn kernel. Cornmeal is made from dried and ground whole corn kernels, whereas cornstarch is made from just the endosperm – the starchy middle – and is ground into a fine powder. Cornstarch/cornflour is mainly used to thicken sauces. Cornmeal is good for a range of baking projects – cakes, loaves, tortilla and breads.
