In our business we use a Paco Jet to churn our ice-cream – it uses a revolutionary method of freezing the custard in a canister and churning once frozen, rather than churning the ice cream as you freeze. A small blade turns at vast spins per second, thus creating the lightest, smoothest ice cream. However, we don’t all have a huge amount of money to spend, and thankfully there are several inexpensive machines on the market, so shop around to find a good price; remember that you may need to freeze the churning container in advance.
