Chocolate twists

1 Cut out triangles from a sheet of acetate. Spread each triangle with a thin layer of chocolate using a palette knife. Leave to almost set.

2 Carefully using the tip of a small knife, lift the triangle from the thin layer of chocolate. Place it in a curved shape mould (see Directory) at an angle and leave to set for at least 2 hours in a cool, dry area. It will contract and form a more pronounced twist as it sets. Remove the acetate strip when ready to use.
