Fenugreek seeds have a faintly sweet, maple-like scent; they are available whole or ground. When soaked in water, ground fenugreek becomes almost gelatinous and, when whipped, thickens into a cloud-like foam. (The leaves, which are not called for in this book, have a similar sweet smell, with notes of grass and alfalfa.)
