Tahini is a paste made from ground sesame seeds. Each country has its own version, so try different brands to find your favorite. You can even make your own: in a food processor or blender, grind 1 cup of sesame seeds (any variety works; toasted if you like) until a paste forms. Drizzle in 1 to 2 tablespoons of a neutral-tasting oil, blending until incorporated. Add more oil, 1 tablespoon at a time, until the mixture is as thin and smooth as you’d like. (This will make about ¾ cup of tahini.) Tahini does not require refrigeration, but the oil may separate from the solids — stir well to combine before using.
