Is the finest oil known to man. It is a naturally delicious oil that needs no refining. It has a lovely flavour, particularly in salad dressing. Try and find pure virgin oil which is obtained from the first pressing of the olives and extracted without heat. Provençal olive oil – full and fruity – is made from green (unripe) olives.
Refined or second-grade olive oil is extracted under heat, by pressure. It is more or less colourless, and doesn’t have the same pure flavour as virgin olive oil.
