Verjus or verjuice

Is an acid juice made from unripe grapes. It is used in the making of several kinds of mustard. You can make it by pressing unripe grapes or gooseberries to extract their juice. Verjuice was used a great deal in cooking in medieval times, and is sharp, like lemon juice (which can be used instead).
