This is a small bundle of herbs wrapped in a piece of cheesecloth to enhance the seasoning of soups, stews, and the like. You can use 2 or 3 sprigs of parsley, a bay leaf, and a sprig of thyme (or ¼ teaspoon of dried thyme); for a tastier bouquet garni you may add a stalk of celery and a stalk of fennel. When the dish is ready, remove the bouquet garni.
