Responsible for the overall management of the kitchen, the chef de cuisine supervises staff, creates menus and new recipes, works with the restaurant manager, purchases raw food items, sets menus and controls costs, trains staff, and maintains a sanitary and hygienic environment for the preparation of food. Depending on the size of the kitchen, chefs de cuisine hire employees, oversee scheduling, and establish a system of communication. The chef serves to inspire his or her employees and also participates in marketing and public relations.
