The butcher treats and prepares meats, poultry, and sometimes fish. This chef may also be in charge of breading meat and fish items and can also fulfill the role of charcutier (see next section).
The butcher’s role is to prepare all of the proteins and give them to the garde manger who will then distribute them based on the orders placed by the clients. In general, the butcher prepares all meats such as veal, lamb, beef, poultry, and game during hunting season. If there is a chef charcutier, the butcher will not prepare any pork.
