Apprentice

Until the late 20th century, a long tradition of apprenticeship had been practiced in many trades including cooking. Young people, usually in their early teens, would apprentice in a kitchen, working their way through the various stations under the guidance of the chef de cuisine and other experienced members of the kitchen. Today, the apprentices (apprentis) are students gaining theoretical and practical training in school and work experience in a professional kitchen. They perform preparatory work and/or cleaning work.
