  • About
  1. Cut off the stem end of the cauliflower.

  2. Remove the inner leaves remaining.

  3. Cut around the hard core to remove.

  4. Cauliflower with core removed.

  5. Using the tip of the knife, cut at the base of a floret.

  6. Like with the broccoli, continue cutting small flowerets from the outer stalks.

  7. Once the bottom section has been cut, trim away the heart.

  8. After the stem is trimmed, you can continue to cut florets.

  9. Trim the stems of the florets.

  10. Keep in acidulated water until ready to use to maintain the whiteness.

  11. To make inflorescences or small buds, take each floret and cut into smaller bouquets.

  12. Continue working around each floret.

  13. Cauliflower inflorescences or buds.

  14. Depending on what it will be used for, whether for a gratin or a garnish for a soup, the cauliflower can be cut into different sizes.
