  1. A classic bouquet garni is made up of parsley stems, celery, thyme and bay leaf, wrapped in the green part of the leek and tied securely with string.

  2. Gather the parsley stems and place the celery in the center.

  3. Add the thyme and bay leaf on top of the celery and parsley stems.

  4. Carefully wrap the green part of the teek around thf stems, makmg sure to enclose them completely and tightly.

  5. Using butchers string, secure the cut end of the string and start wrapping around one end of the bouquet garni.

  6. Wrap several times.

  7. Then turn the bouquet garni and begin wrapping string around the other end.

  8. Once the other end has been tied, cross the string over to tie with the loose end.

  9. Loop twice in order for the knot to hold well.

  10. The size of the bouquet garni can be adjusted according to its use. Large bouquet garni may need two pieces of green leek to completely wrap around the other elements.
