There are nearly 1,250 species of onion in the bulb family. The three varieties of onion that are familiar to most people are the spring onion, the common onion (yellow and white), and the pearl onion.

The spring onion (Allium fistulosum) is also referred to as a green onion or scallion. It possesses an undeveloped slender white bulb from which long, tender green leaves extend. Onions are believed to be indigenous to Asia; however, it is entirely possible that they have grown wild on every continent.
