The pattypan squash is a summer squash that is best when small, smooth, firm, and with good coloring. They measure between 3 to 4 inches (7 to 10 cm) in diameter and are distinctively shaped. This particular type of squash has a soft, sweet flavor similar to that of an artichoke. Pattypans cannot be kept for a long period of time because as they age, the flesh lightens and toughens considerably.
