The butternut squash is considered a winter squash and can be stored from 30 to 180 days. They are ripe enough to enjoy when they are approximately 8 to 12 inches (20 to 30 cm) long, and 4 to 5 inches (10 to 13 cm) in diameter, and have a lovely orange color. A slightly green skin is an indicator that the squash has not yet fully ripened.
