  1. After removing the stem, cut the tomato in half.

  2. If needed, trim the bottom and top of the tomato to keep it from rolling.

  3. Using a melon bailer, trim the interior ribs and seeds.

  4. Tomatoes should be completely cleaned with no holes or punctures to the bottom.

  5. Sprinkle the interior with salt to degorge.

  6. Place upside down onto paper toweling to drain.
