Iceberg, or crisphead, lettuce has a large round, tightly packed head of pale green leaves. Iceberg lettuce is crisp, juicy, and hardy with a neutral taste. Iceberg is commonly used for salads and to garnish foods. Iceberg lettuce was referred to as crisphead lettuce until the early 1900s–it became known as iceberg lettuce when California began shipping large quantities of the lettuce to other parts of the United States under piled ice.
