Species name: Valerianella locusta
Corn salad, mâche or lamb’s lettuce grows wild in Europe, northern Africa, and western Asia. A common cultivar in France and Germany, it is a low-growing plant with wide, rounded leaves that are tender and succulent. It is considered a winter salad because it grows well in colder temperatures. It grows easily and can often be found growing like a weed in cultivated fields (in particular corn fields) and open spaces.
