Species name: Mixed varieties
Mesclun greens are a bitter-tasting mix that varies depending on the area where it is purchased. Traditionalists in Provence, France, use a mix of chervil, endive, arugula, and lettuce in equal proportions. The North American mixes include arugula, endives, mustards, lettuces, purslane, chicory, parsleys, fennels, escarole, and tender greens such as bibb or Boston lettuce.
