The oyster mushroom is characterized by its appearance, scent, and oysterlike flavor. This variety possesses a very small stalk and grows sideways in clusters. Oyster mushrooms are moist, hairless, and are light to dark gray in color. The color of the oyster mushroom will darken as it ages. The fan-shaped cap can be 2 to 8 inches (5 to 20 cm) in width. Oyster mushrooms have long been cultivated in Asia.
