  2. Cut crosswise.

  3. Continue to cut the mushroom brunoise quickly and carefully.

  4. Clockwise from top center: step 1 peeled mushrooms, step 2 sliced mushrooms, step 3 mushroom julienne, and step 4 mushroom brunoise.
