Hold the mushroom with your left hand and place the cutting edge of the knife on top facing away from your body. The blade should be approximately at a 45 degree angle and touching the center of the head of the mushroom.
As you turn the mushroom toward you, turn your right hand with the knife away from you, keeping the blade against the mushroom.
The blade should follow the curve of the mushroom head, and the action of “turning” your hands will result in a small groove being made in the mushroom head.
Place the knife below the first cut and repeat the movement.
Each cut should he close enough to the next to ensure that the skin is completely removed.
The cut should be made in one movement, so do not worry about cutting off the strips of mushroom.
Continue all the way around the mushroom.
Once completed, turn the mushroom over and cut straight across the bottom to remove the stem and any remaining strips.
Rub with lemon juice to keep the mushroom from discoloring.
