Unlike beans and peas, which are considered part of the Fabaceae family, corn is a member of the Poaceae family. Corn is also not technically a legume but due to its pod shape and cooking methods it tends to be categorized as such by food distributors. Corn is grown on every continent in the world with the exception of Antarctica. The two most popular varieties are white and yellow. As soon as corn is harvested, the sugars begin to turn to starch. Corn is not only a popular food item, but also the foundation of many common by-products, including bourbon, corn flour, corn meal, corn oil, cornstarch, corn syrup, corn whiskey, and laundry starch.
