Shelling Beans

Species names: Phaseolus lunatus (lima); Glycine max (soy); Pisum sativum (pea)

Shelling beans are indigenous to Japan, India, Central America, and the Mediterranean. Shelling beans are beans that have reached full maturity and are then removed from the pod before they have dried. The pod is not consumed. When the bean is grown for the seed only, it may be considered a shelling bean. Some shelling beans include Lima, soy, peas, and fava or broad beans.
