Celery Root

Celery root, also known as celeriac and celery rave, is indigenous to Europe. It is an edible root vegetable that belongs to the celery family and is grown specifically for its fleshy white and spherical root. In general, the roots are large and attached to a turnip-like bulb. Smaller roots have better flavor, while larger roots are more fibrous and better suited to longer cooking.
