A majority of the dry matter contained in a potato is made up of starch and the starch content will vary among the different varieties, thus giving potatoes different properties when cooked. Some potatoes are better for boiling or baking, but they can be used for both. Potatoes can be categorized by their usage such as baking, boiling, or all-purpose, or their physical properties, such as firm, fairly firm, and mealy (starchy).
