Species name: Apium graveolens dulce
Celery, which is indigenous to the Mediterranean, is one of the most popular vegetables eaten in the Western world. Two varieties are used: Pascal and golden celery. Pascal celery is bright green and the most widely cultivated. Golden celery has delicate whitish-yellow stalks and leaves and is used less and is, therefore, less common than Pascal celery.
