Celery, which is indigenous to the Mediterranean, is one of the most popular vegetables eaten in the Western world. Two varieties are used: Pascal and golden celery. Pascal celery is bright green and the most widely cultivated. Golden celery has delicate whitish-yellow stalks and leaves and is used less and is, therefore, less common than Pascal celery.
Celery grows in bunches of large, leafed ribs that encompass the tender heart. Golden celery is grown under the soil to avoid the sun and chlorophyll production, resulting in celery that is light in color and more tender.
