- Trim the stalk of its leafy top and wide bottom. Using a vegetable peeler, starting at one end, thinly peel oft the stringy outer layer.

- The purpose is to remove the outer fibers which are tougher. Be careful not to remove too much.

- Finish by the outer corners of the celery stalk.

- The peeled stalk will be lighter in color with a smoother surface.

- Keep the peeled celery immersed in ice water until needed.
