Citrus maxima

As one of the three parent species and by far the largest citrus fruit (growing anywhere from the size ofa softball to that of a basketball), the pomelo gives the impression of being the matriarch of its unruly family. In addition to its range of sizes, the specifications for this fruit are incredibly variable: from round to pear shaped; with skin ranging from green to yellow hues; and translucent pulp, color«! anywhere from yellow to red. Accounting for this diversity are the 25 known varieties, none of which base had much growing or commercial success in North America. That being said, the pomelo can be found in local Asian markets and is finding its way into a broader spectrum of culinary traditions.
