Anise is native to the Mediterranean and is one of the oldest known spices, hav ing been used since ancient times. Anise seeds can range in color from grayish green to brown, and the seeds are ribbed and oval shaped. The seeds lose their flavor quickly, so storing them in airtight containers will help retain their flavor. It is best to purchase the seeds whole and then grind them as needed. The bouquet is fragrant and sweet and possesses a mild licorice taste–that should come as no surprise considering that licorice is flavored with anise. Anise is used to flavor poultry, fish, root vegetable dishes, soups, and alcoholic drinks and cordials.
