Chervil is indigenous to Russia and is often referred to as “rich man’s parsley.” This comparison is made because it is similar to parsley in appearance but more fragile and therefore more expensive. Chervil belongs to the Apiaceae family and possesses bright green leaves and a fresh, subtle flavor that is similar to tarragon. Some varieties have edible roots that taste like small turnips. It is best to use this herb fresh, because chervil loses most of its flavor when it is dried.
