From the Norse dilla meaning “to lull,” dill grows to about the height of 16 to 24 inches (40 to 60 cm) with slender stems and delicate leaves between 4 and 8 inches (10 and 20 cm) long. Dill is native to Eastern Europe, but is cultivated in northern and southern climates alike.
Dill seed is harvested by removing the flower tops from the stem of the plant. The flower tops are then placed in humidity- and temperature-controlled sheds where they will be dried until the seeds detach from the stalks.
