Ginger is native to Asia and is available fresh or ground for culinary purposes. Ginger is a root with thin brown skin and pale yellow flesh; in botanical terms this chunky root is referred to as a rhizome. While ginger is mild tasting when young, its pungency increases as it matures. Fresh ginger and ground ginger also have different potencies and are not interchangeable; use 6 parts fresh ginger for 1 part ground ginger.
