The spice called turmeric is made from the root of the turmeric plant, which is a tropical perennial native to Southeast Asia. Growing from 24 to 39 inches (60 to 100 cm) tall with bright green, lily-like leaves that surround conical clusters of yellow flowers, turmeric thrives in its hot, moist climate. The root is yellowish-brown with a dull orange interior that becomes bright yellow when powdered.
Turmeric has an earthy taste to it, with a bitter undertone, and is only used in its ground form. The powder will maintain its color indefinitely; however, the flavor will diminish over time. It should be stored in an airtight container away from sunlight. Turmeric is mainly cultivated in Bengal, China, Taiwan, Sri Lanka, Peru, Australia, and the West Indies.
