A butter sauce is a seasoned butter that is served hot. As in a classic beurre nantais, red wine and shallots are reduced and seasoned with salt and pepper before whisking in cold butter. The liquid can vary but its presence is more as a flavor and a complementary ingredient to the sauce than a primary ingredient of the sauce.
Derivatives of the sauce au beurre are beurre nantais, beurre blanc, and the use of different wines and aromates in the reduction.
