Composed butters are cold seasoned butters where the butter is softened to the point where flavors, such as lemon juice or Cognac, and chopped herbs can be incorporated. The butter is then rechilled. It is usually served with grilled meats, poultry, and fish, where a slice is placed on top to soften and melt. Some examples of composed butters are beurre d’escargots (snail butter), beurre maître d’hôtel (lemon juice and parsley), and beurre d’anchois (anchovy butter).
