- Heat oil to 160°C. Place two wooden spatulas or spoons in the hot oil.

- Break the egg into a small container and carefully pour into the hot oil.

- The hot oil will bubble, and using the wooden spatulas, turn the egg.

- Continue to turn the egg so that it colors evenly.

- Once cooked, approximately 3 minutes, place on a napkin or paper to absorb excess oil.

- Trim the crisp bits of egg white to give the egg an even, rounded appearance.

- Season with salt and pepper and serve while still hot and crisp on the outside.
