  • About
  1. Heat clarified butter in a pan over medium high heat. Add the filling, in this case, potatoes and onions.

  2. Beat the eggs together and season with salt and pepper. Pour over the garnish.

  3. Use a fork to stir the eggs so that they cook evenly and are evenly distributed.

  4. Lightly press the sides to make even edges.

  5. Once the egg is almost set, cover the pan with a plate and flip the omelette over.

  6. Slide the omelette back into the pan.

  7. Allow the other side to cook 1-2 minutes.

  8. Slide onto a warm serving plate.
