Scientific name: Oncorhynchus keta

Also known as dog salmon due to its sharply pointed, hooked upper jaw and canine teeth, chum salmon are found not only along the west coast of North America but also as far as Japan and Korea.

Chum salmon are the poorest jumpers of the Pacific salmon species— waterfalls that do not impede other species can often slow or stop their upstream migration.

This salmon is preferred for cold smoking because of the low oil content of its flesh.
