Scientific name: Scophthalmus rhombus

Brill is a species of flatfish native to the North Atlantic, the Baltic and the Mediterranean Seas. Living mostly in deep, offshore waters, brill has a thin flat body with brown skin. Except for the tail, the skin is covered in light and dark spots and the underside of the fish is a pinkish white or cream color. Like other flatfish, brill is able to change its color depending on its surroundings.
Often confused with turbot (brill and turbot belong to the same family, Scopthalmidae), brill can be distinguished by its smaller size; turbot can reach weights of 33 to 37 pounds (15 to 17 kg), whereas brill is full grown at approximately 7 pounds (3 kg) [measuring between 1.3 and 2.5 feet (40 and 75 cm)].
