Lemon Sole

Scientific name: Limanda ferruginea (northwest Atlantic), Microstomus kitt (European lemon sole), Parophrys vetulus (northwest Pacific)

1. Limanda ferruginea: Caught along the U.S. and Canadian Atlantic coastal shelf, this fish is also known as a yellow tail flounder. It is brown hued with dark brown spots and a tail fin with a yellow tinge.
2. Microstomus kitt: This is the variety of lemon sole known by European fish lovers. It is mainly fished off the coast of England and Ireland and its habitat is the rocky sea bottom of the continental shelf.
3. Parophrys vetulus: Representing a small northwest Pacific fishery, this variety is sometimes referred to as California sole or, confusingly enough, English sole. Carrying the distinction of producing a substantial fillet, this lemon sole is unfortunately susceptible to absorbing pollutants and has suffered stock decreases as a result.
