Alaska Plaice

Caught in the cool waters off the coast of Alaska and Russia, the Alaska plaice is most often a bycatch, picked up by trawlers gathering other fish. Reaching a maximum length of 24.5 inches (62 cm) and a maximum weight of 7.5 pounds (3.5 kg), Alaska plaice is visually remarkable for its mother-of-pearl skin contrasted by its red rays, the “rays” being the equivalent of fins for flatfish. Due to its overall size, the fillets of this fish are generous and the flesh is enjoyed when smoked, among other preparations.
