Sole

Scientific name: Solea solea

The sole is a flatfish from the Soleidae family; however, outside of Europe the name sole is applied to other similar flatfish and members of the flounder family. The common sole, or Dover sole, is born like all other flatfish—with one eye on each side of its body. When the young reach approximately 1 cm long, they metamorphose into a flatfish, with small, close-set eyes on the right side of the body. The Dover sole can reach up to 2.3 feet (70 cm) in length. With its preference for shallow water with a sandy or muddy bottom, sole is found in the eastern Atlantic Ocean, from Norway to Senegal, and practically all areas of the Mediterranean Sea.
