Langoustine

The langoustine is a small, slender, orange-pink lobster, growing up to 9.4 inches (24 cm) long. Inhabiting the northeastern Atlantic Ocean and North Sea—as far north as Iceland and northern Norway and as far south as Portugal—langoustine feed primarily on worms and small fish. While known also as the Norway lobster, most menus and recipes favor the term langoustine.

Sixty thousand metric tons of langoustine are caught every year, almost half in the waters of the United Kingdom. Because the lobsters are caught by trawling, lobster boats catch a number of other fish species, including plaice and sole.
